Parfait of pineapple and coconut with kiwi

Recipe

Break the eggs and put them with the extra yolks in a deep pan. Beat the eggs with a whisk. Weigh the correct amounts of sugar and vanilla sugar and pour them into the beaten eggs.
Cut the vanilla pods in half and scrape out the black seeds. Put them in the pan with eggs and sugar. Beat the mixture a bit frothy before you heat the pan.
Put the pan on a low heat and keep beating with the whisk until you get a light sabayon. Beat in an eight shape or turn your pan from left to right during the beating. Work while beating from the wrist. Keep the fire under control so that the egg yolks don't turn into an omelet. Remove the pan from the heat from time to time. Keep going until you get a frothy mass in which the whisk leaves traces. Taste the result.
Spoon the airy egg mousse into the mixing bowl of the food processor. Place the beater in the appliance and let the machine run until the mousse has cooled completely. At the same time, the foam becomes extra airy. Give the machine the necessary time for this.
Meanwhile, pour the full cream into a deep mixing bowl and beat with the whisk until the cream has the thickness of yogurt or mayonnaise. So: lumpy, but no stiff whipped cream.
Pour the cold mousse into the whipped cream and mix carefully with a spatula until you get a smooth mixture.
Add the compound strawberry and beat until you have a stiff mousse. Put in a bowl and leave to rest in the refrigerator.
Serve with topping kiwi.
